Food Defense has grown to mean more than just the quality of what we choose, but also the logistical challenges behind the procurement, transporting, receiving and storage of the thousands of items that we receive each month in each location.

Continual updates to our HACCP guidelines as well as annual review of all SOPs and training for our food handlers and service staff.

In addition to the process for procurement and delivery. We use laboratory technology to test the foods that arrive and daily samples from each cafeteria as foods are prepared for daily consumption.
